Description: Common beans are known to be important source of plant protein, vitamins and minerals with proven health benefits. Lack of essential minerals is a major subset of malnutrition afflicting large population groups in the developing countries of the world. This study examined the potential of enhancing the potassium and magnesium in the daily diet using common beans powder. The nutritional sensitivity assessment was done through variation of the levels of inclusion of bean powder in three common meals. The effect of processing conditions including softening techniques on the potassium and magnesium retention was evaluated. Finally, the nutritional implication of bean powder inclusion to meet the recommended daily dietary intake for different life stages was evaluated.
