Description: Electrohydrodynamic (EHD) drying is a non-thermal alternative to thermal drying process. To date most of the research has been based on its application and very few have explored the governing mechanisms for the enhancement of heat and mass transfer in EHD. Lack of this knowledge limits its scalability and applicability. Previous studies conducted on EHD drying of biological and non-biological materials have suggested that a thorough insight into mechanisms including electrocapillarity, electroporation, conversion of kinetic energy of the corona wind into heat (conservation of energy), mass transfer under forced convection (cross-flow) and presence of electric field etc. is required to fill up the conceptual gaps. This study intends to analytically assess the possible mechanisms of heat and mass transfer during EHD drying process.
