Description: In both academic research and practice related to drying operations and their performance, drying is often still viewed as an independent unit operation (UO), separated from the other pre-drying (washing, peeling, slicing, chemical and thermal pre-treatment) and post-drying (packaging, storage) operations. However, there is extensive evidence of the cumulative effects of UOs surrounding conventional drying processes on both product quality and resource usage. Furthermore, many of the involved processes within a single UO are characterised by intrinsic dynamics. Nevertheless, optimisation of UOs or of the overall process still are primarily treated as black boxes and optimised with according methods (e.g. Derrenger?s desirability function applied to a black box) Therefore, a new and systematic approach to planning and diagnostics of drying is imperative for the future of intelligent drying operations as part of the entire food manufacturing cycle [1]. This approach includes further development of dynamic model systems, collaborative data management, modelling and simulation platforms [2] for the identification and evaluation of interactions between physical system components. Furthermore, the dynamics of interactions between technology and product with a view to the development of digital twins of both the product and the technological environment need to be investigated. These digital representations, however, depend on the integration of real measurements of core attributes to increase their relevance for real world applications [3].
